Why Does Nutrition Science Always Seem to Flip-Flop?

It feels like every time I read a new study, it completely contradicts the last one eggs are bad, then they’re good; coffee causes cancer, then it prevents it. Is nutrition science just inherently messy, or is there a way to make sense of all the conflicting info? I work with stats in my job, so I get that research isn’t always black and white, but the whiplash is real. How do you guys navigate this when making decisions about diet or supplements? Are there certain sources or methods you trust more than others?
