Why Aren't Superfoods More Widely Grown?

I was chatting with some folks on a brewery tour recently, and the topic of superfoods came up. It got me wondering if foods like quinoa or kale are so packed with nutrients, why do farmers still focus so much on staples like wheat and corn? From a numbers perspective, wouldn’t it make sense to shift resources toward what’s supposedly better for us? I’m curious if it’s about climate suitability, market demand, or maybe just how these crops fit into larger agricultural systems. What do you all think drives these growing decisions?
